We began experimenting with a new-fangled pan pizza during the Covid pandemic at our wine bar and small plates restaurant, Glou, in Prospect Lefferts Gardens. To develop something special for families in the neighborhood that might make them feel joy in a time of tear and anxiety.
Now comes Brooklyn Pan Pizza and Wine, an expansion of the pizza concept and a vision for every neighborhood, a place where friends and families can gather, eat – for pizza wine and community. We are excited to open the first Brooklyn Pan Pizza in Brooklyn’s most vibrant neighborhood, a melting pot of cultures, identities and shiny young families. You’ll find our humble pizzeria and wine bar at the corner of Grand Ave and Berry Street. It has a light-wash large bar and wide windows. Our shelves are always stocked with cool natural wines.
Our pizzas are inspired by Detroit, but born (and raised) in Brooklyn. Twice baked, with a cheesy crust and then loaded with fresh toppings. Our super hydrated dough is cold fermented overnight, creating a light airy crust that cooks up crispy, with nooks and crannies to hold all the flavours.
The first bake is layered right the edge with mozarella, grana padano, percorino, giving it that savory pan pizza crunch. The second time, smothered with hand crushed tomato sauce, more cheese and serious toppings – think spicy sopressata, cremini mushrooms, roasted garlic ricotta, almond pesto, and more.
